Ingredients
* 1 cups sugar *
1 cup water

4 Granny Smith apples, peeled and cored and diced
* 30ml white rum *
30ml apple schnapps
* 15ml butterscotch schnapps
* 1 cup of ice
Directions

Caramelise the apples, place sugar and water in a saucepan. Cook and stir in low heat until sugar dissolves. *~
Then boil and simmer until it turns golden. Add apples and then simmer for a further 5 minutes. Remove from heat and cool.

For decoration, make another toffee, without adding the apple. Pour onto greaseproof paper in a pretty design. Let it set and peel off to place in drink.

Add rum, both the schnapps, ice and 2 tablespoons of the caramelised apples to a blender . Blend and serve in cocktail glasses with toffee decoration.
